Multiple Replace

Too often various models will rewrite with different characters like — instead of - or parentheses. “ being ” “instead of” This can be very annoying, especially with the mix of them all through writing, having to replace each one at a time. Even when just typing I get the wrong characters than I want. So, could there be a multiple replace tool? Or something within the document to choose which is used?
